One year means 365 days after key activation.
Two years means 730 days after key activation.

After key is expired PRO version can not be used anymore.

by buying a new key and entering in your WordPress Contest Gallery PRO version area.
After key expiration you can also switch to regular version
and export your PRO version collected data in the regular version.

A website means a WordPress installation for a certain domain.
If you have a WordPress installation on example.com
then key is valid for example.com. If example.com is a multisite,
then the key is also valid for site1.example.com, site2.example.com
or example.com/site1, example.com/site2 and so on, for all subsites of a multisite.
You can switch your key anytime to another domain in your Contest Gallery PRO version.
